Pani Puri Recipe

When we were kids , me and my sister use
to go out for eating golgappas at chaat
vala we use to be amazed we use to think
how it is possible to blow them like a
balloon we use to search for a pump.The
might have been used to fill air inside the
golgappas and golgappa is like that it's
fascinating right.All the dishes around the
world on one side but everytime when you
look at the golgappa , you think how air is
blow inside it , so today we will blow air
inside the golgappas , we will be making
Pani Puri as well.

Ingredients :
For Puri :
2 cups Semolina, सूजी
1 cup All purpose flour, मैदा
Salt to taste, नमक स्वादअनुसार
½ cup Warm water, गुनगुना पानी
Oil for frying, तेल
For Pani Puri Ka Pani :
2 cups Mint leaves, पुदीना
1 cup Coriander leaves, हरा धनिया
1 inch Ginger, peeled, slice, अदरक
2-3 green Chillies, broken, हरी मिर्च
¼ cup Jaggery, गुड़
1 cup Ice cubes,बर्फ के टुकड़े
Salt to taste, नमक स्वादअनुसार
2 cup Water, पानी
1 tsp Rock salt , काला नमक
1 tbsp Roasted Cumin powder, जीरा पाउडर
1½ tsp Chaat masala, चाट मसाला
⅓ cup Tamarind pulp, इमली का गूदा
½ cup salted Boondi, बूंदी
For Potato Masala (Stuffing) :
1 large Potato, boiled, आलू
1 tsp roasted Cumin powder, भुना जीरा पाउडर
1 tsp Rock salt, काला नमक
½ cup Green Moong, boiled, हरा मूंग
1 tsp Chaat masala, चाट मसाला
1 tsp Red Chilli powder, लाल मिर्च पाउडर
For Serving :
Tamarind chutney, इमली की चटनी
Sev, सेव
Salted Boondi, बूंदी
Ragda, रगड़ा
Green Moong, हरा मूंग
Puri, पुरी
Pani, पानी
Process :
For Puri:
In a parat, combine semolina, all-purpose flour, salt to taste, and warm water as needed.
Knead into a stiff dough, cover with a damp muslin cloth, and let it rest for 30 minutes.
Roll out the dough and use a round cutter to shape it. Deep fry the pieces until golden brown.
For Pani Puri Ka Pani :
Transfer the mixture to a grinder, add a little water, and grind into a smooth paste.
Once done, transfer it to a bowl, and add black salt, cumin powder, and water. Mix well and strain it into a deep container.
Finally, add tamarind pulp and salted boondi, and mix everything together.
For Potato Masala :
In a bowl, mash the boiled potatoes well. Add cumin powder, black salt, green moong, chaat masala, and red chili powder. Mix everything together.
Serve with puri, ragda, pani, green moong, tamarind chutney, and sev.
