Hara Bhara Kabab About :

Hara Bhara Kabab is a popular vegetarian snack in Indian cuisine, made from a blend of spinach, peas, potatoes, and spices.

Its name "Hara Bhara" translates to "green and healthy" in Hindi, referring to the vibrant green color from the spinach and peas.

The dish is believed to have originated in India, likely during the rise of vegetarianism in the Indian subcontinent, but its exact history is unclear.

 It gained popularity in the 1990s as part of the broader movement toward healthier, plant-based eating options. 

It is typically served as a starter or appetizer and is often enjoyed with chutney .Let's start

Ingredients :

For Kabab Mixture :

1 tbsp Ghee, घी

1 tsp Cumin seeds, जीरा

A pinch of Asafoetida, हींग

1 inch Ginger (peeled & chopped) अदरक

A pinch of carom seeds, अजवाइन

1 ½ cup fresh Green peas, ताजी हरी मटर

Salt to taste, नमक स्वादअनुसार

2 no. Green chillies (less spicy & finely chopped) हरी मिर्च

1 small bunch Spinach, roughly chopped, पालक

½ inch Ginger (peeled & chopped) अदरक

2-3 tablespoon Water, पानी

1 medium Boiled potato, mashed, आलू

2-3 teblespoon fresh Mint leaves, roughly chopped, पुदीना पत्ता

2-3 teblespoon fresh Coriander leaves, roughly chopped, धनिया पत्ता

½ cup Water, पानी

2 tsp Prepared Masala, तयार किया हुआ मसाला

 
For Masala :

1 heaped tbsp Black peppercorns, काली मिर्च के दाने

1 no. Black cardamom, बड़ी इलायची

5-6 no. Green cardamom, हरी इलायची

¼ inch Mace, जावित्री

3-4 no. Cloves, लौंग

½ tsp Coriander seeds, धनिये के बीज

¼ tsp Cumin seeds, जीरा

Salt to taste, नमक स्वादअनुसार

 
For Chutney  :

2-3 tbsp Oil, तेल

7-8 no. dry Red chillies, सूखी लाल मिर्च

4-5 no. Garlic cloves, sliced, लहसुन

½ cup Roasted chana dal, भुनी हुई चना दाल

1 ½ cups Curd, beaten, दही

Salt to taste, नमक स्वादअनुसार

 
For Shallow Frying :

2 tbsp Ghee, घी

Prepared Kebab, तयार किया हुआ कबाब

 
For Garnish :

Prepared chutney, तयार की हुई चटनी

Green chutney, हरी चटनी

A pinch of Degi red chili powder, देगी लाल मिर्च पाउडर

Coriander sprig, धनिया पत्ता

Lemon wedge, नींबू की फांक


Process :


For Kebab Mixture :

Heat ghee in a kadai, and once it's hot, add cumin seeds and asafoetida. Let them splutter.

Add ginger, carom seeds, fresh green peas, salt to taste and saute it for a minute.

Add green chillies, spinach, ginger and cook it for a while.

Add water, boiled potatoes, mint leaves, and fresh coriander leaves. Cook well.

Cover with a lid, add more water if needed, and cook for 5-6 minutes on medium heat until everything is cooked through.

Transfer the mixture to a tray and leave it aside to cool down at room temperature.

Transfer the mixture to a blender and grind it into a smooth paste.

Add prepared masala and give it a good mix.

Take a small portion of the mixture and shape it as desired.

Keep it aside for further use.
 

For Masala :

In a pan, add black peppercorns, black cardamom, green cardamom, mace, cloves, coriander seeds, cumin seeds, salt to taste and dry roast it for a minute on low flame.

Transfer it to a blender and grind it into a fine powder.

Keep it aside for further use.
 

For Chutney :

In a pan, add oil, once it’s hot, add dry red chillies, garlic and saute it until golden brown.

Add roasted chana dal and cook it for a while until aromatic.

Strain out the excess oil, transfer the prepared mixture to a mixer grinder jar and grind it coarsely.

Take a bowlful curd, add prepared chutney mixture, salt to taste and mix it well.

Keep it aside for further use.
 

For Shallow Frying :

Heat ghee in a pan, and once hot, place the prepared kebabs in the pan. Shallow fry until they are crispy on both sides.

Transfer the kebabs to a serving dish and garnish with degi red chili powder, a sprig of coriander, and a lemon wedge.

Serve hot with prepared chutney and green chutney.
