6. Garlic - 4-5 cloves (finely chopped)


7. Green chilies - 2-3 (according to taste)


8. Cream or Milk - 2-3 tablespoons


9. Garam masala - 1/2 teaspoon


10. Salt - to taste



Process:


1. Prepare the Spinach:

Rinse the spinach leaves well to remove any dirt.

Boil water and add a pinch of salt.

Add the spinach leaves to the boiling water for about 30 seconds, then immediately transfer them to cold water.
Tip: This process helps retain the green color of the spinach.

After cooling, blend the spinach along with green chilies into a smooth paste.


2. Prepare the Tempering:


Heat ghee or oil in a pan.

Add cumin seeds and sauté until they splutter.

Add chopped onions and garlic, and cook until they turn golden brown.


3. Prepare the Spinach Mixture:


Add the spinach paste to the pan and cook for 2-3 minutes on low heat.

Avoid adding any sour ingredients (like tomatoes or lemon) as they can spoil the green color of the spinach.

Add a small amount of water if necessary to adjust the consistency.


4. Add the Paneer:


Add the paneer cubes directly into the spinach gravy without frying them.

Stir in milk or cream and mix gently, ensuring the gravy is neither too thick nor too thin.

Sprinkle garam masala and cook for an additional 1-2 minutes.
